Peter Rienhart's100% Whole Wheat - image of the process

I am not good at posting layout yet, but here are
a few images of the process: The first shows an image of the Sprouted Grains drying before being made into flour. The second image is The Proofed Loaf

Freshly Ground Spring Wheat Berries and Spelt, sprouted then dried .
